Lobster Puffs

  1. Preheat oven to 375 degrees (200 C.).
  2. In a medium bowl, beat egg whites until frothy.
  3. Gradually add dry milk and beat until stiff but not dry.
  4. Fold in lobster, scallion, parsley, salt, Parmesan cheese, and cayenne.
  5. Drop tbsp of mixture onto a greased baking sheet.
  6. Bake 10 minutes, or until puffed and lightly browned.
