Herb and Cider Jelly

  1. HEAT cider and herbs to boiling in a medium saucepan.
  2. Set aside to steep for 5 minutes.
  3. ADD sugar and vinegar.
  4. STIR over medium high heat.
  5. Bring to a full rolling boil and boil hard 1 minute, stirring constantly.
  6. Remove from heat.
  7. IMMEDIATELY stir in liquid fruit pectin.
  8. LET stand 5 minutes, stirring constantly to distribute herbs.
  9. POUR quickly into warm, sterilized jars filling up to 1/4-inch from rim.
  10. SEAL while hot with sterilized 2-piece lids with new centres.
