Mango Chutney
- 2 1/2 cups peeled, pitted and finely chopped ripe mangos Whole Foods 2 ea For $4.00 thru 02/09
- 2 Tbsp. Heinz Apple Cider Vinegar
- 1 small onion, finely chopped King Sooper's 1 lb For $0.99 thru 02/09
- 1/2 cup raisins
- 1 Tbsp. grated fresh gingerroot
- 2 tsp. celery seeds
- 2 tsp. mustard seeds
- 1/2 tsp. crushed, dried red chili peppers
- 1 garlic, clove, crushed
- 1-1/2 cups sugar
- 1/2 cup firmly packed brown sugar
- 1 pouch Certo Liquid Pectin
- MEASURE prepared fruit into a large saucepan.
- Add vinegar, onion, raisins, ginger, seeds, chili peppers and garlic.
- ADD sugars to fruit and mix well.
- PLACE saucepan over high heat.
- Bring to a full rolling boil and boil hard 1 minute, stirring constantly.
- Remove from heat.
- IMMEDIATELY stir in liquid fruit pectin.
- STIR and skim foam for 5 minutes to prevent floating fruit.
- POUR quickly into warm, sterilized jars filling up to 1/4 inch from rim.
- SEAL while hot with sterilized 2-piece lids with new centres.
