Mango Chutney

  1. MEASURE prepared fruit into a large saucepan.
  2. Add vinegar, onion, raisins, ginger, seeds, chili peppers and garlic.
  3. ADD sugars to fruit and mix well.
  4. PLACE saucepan over high heat.
  5. Bring to a full rolling boil and boil hard 1 minute, stirring constantly.
  6. Remove from heat.
  7. IMMEDIATELY stir in liquid fruit pectin.
  8. STIR and skim foam for 5 minutes to prevent floating fruit.
  9. POUR quickly into warm, sterilized jars filling up to 1/4 inch from rim.
  10. SEAL while hot with sterilized 2-piece lids with new centres.
