Savory Muffins Stuffed With Tuna, Corn and Basil
- 1 small can Canned tuna
- 3 tbsp Corn kernels
- 1 1/2 tsp or as much (to taste) Dried Basil
- 1 tbsp Grated parmesan cheese
- 1/2 Onions (finely chopped) small
- 50 grams Margarine or butter
- 1 Egg
- 20 grams Sugar
- 120 grams Plain flour
- 1 tsp Baking powder
- 1 dash Salt and pepper
- 1 tbsp Mayonnaise
- 60 ml Milk
- *Preparation* Preheat the oven to 180 degrees C. Drain the oil from the tuna.
- Mix together the margarine, egg and sugar in a bowl.
- Sift together the flour and baking powder and fold into the mixture.
- Stir in the milk, mayonnaise and grated cheese.
- Add the drained tuna, chopped onion, corn, basil, salt and pepper and combine.
- Pour evenly into 6 muffin cups.
- Sprinkle melting cheese on top if you like.
- Bake in the 180 degrees C oven for about 30 minutes.
- This is how the muffin looks cut in half.
- You can add more corn kernels if you like.
