Blackberry & White Chocolate Muffins
- 2 cups All-purpose Flour
- 13 cups Sugar
- 1 teaspoon Baking Powder
- 1 teaspoon Baking Soda
- 1/4 teaspoons Salt
- 1 whole Large Egg
- 1 teaspoon Vanilla Extract
- 1/4 cups Orange Juice
- 2 Tablespoons Vegetable Oil
- 8 ounces, weight Mascarpone Cheese
- 1 Tablespoon Lemon Juice
- 1 cup White Chocolate Chips
- 2 cups Fresh Blackberries
- 1/2 cups White Chocolate Chips
- 2 Tablespoons Vegetable Oil
- Preheat the oven to 400 degrees F.
- For the muffins, combine the dry ingredients (flour, sugar, baking powder, baking soda, and salt) in a bowl.
- Make a well in the center of the flour mixture.
- In another bowl, combine the egg, vanilla, orange juice, vegetable oil, mascarpone cheese and lemon juice and combine well.
- Pour the egg mixture into the flour mixture.
- Stir mixture until moist.
- Add the chocolate chips.
- Gently fold the blackberries into the mixture.
- Spoon the muffins into 12 muffin cups.
- Bake muffins for 18 minutes at 400 degrees F.
- For the drizzle, in a microwave-safe bowl, mix together the chocolate and vegetable oil and cook until the chocolate has melted (about 45 seconds on high).
- Remove the muffins from the oven and when cool, turn out onto a wire rack.
- Drizzle the melted chocolate over the top of the muffins.
