Black And White Bean Vegetable Chili Recipe
- 1 Tbsp. Oil
- 1/2 c. Onion, minced
- 1/2 c. Celery, minced
- 1 x Garlic clove, chopped
- 1 med Potato, peeled and minced
- 1 can Chicken broth, or possibly Veg. broth 14oz
- 1 can Great northern beans, rinsed and liquid removed
- 1 can Black beans, rinsed and liquid removed
- 1 can Corn 11oz, liquid removed
- 1 can Green chiles 7oz, whole
- 1 tsp Cumin
- 1 Tbsp. Fresh cilantro, minced
- 1 Tbsp. Lime juice
- 1/4 c. Light lowfat sour cream
- Heat oil in large saucepan over medium heat till warm.
- Add in onion, celery and garlic; cook and stir 2-3 minutes.
- or possibly till vegetables are tender.
- Stir in potato, broth, beans, corn, chiles and cumin; mix well.
- Cover; cook 12-15 min or possibly till potato is tender, stirring occasionally.
- Stir in cilantro and lime juice.
- To serve, ladle into bowls; top with sour cram and, if you like additional minced cilantro.
