Baked Salmon and Vegetables in Foil
- 2 Fresh salmon fillets
- 1/2 medium Onion
- 1/2 of a bunch Shimeji mushrooms
- 4 slice Carrot
- 1/2 Green pepper
- 1 Oil
- 1 Easy melting cheese
- 1 Mayonnaise
- 1 Ponzu
- Slice the onion and carrot thinly.
- Cut the green pepper into thin batons.
- Separate the shimeji mushrooms into bite sizes.
- Take a big piece of foil and grease lightly with paper towels.
- Place the onion and salmon.
- Scatter easy melting cheese.
- Scatter the shimeji mushrooms, carrot and green peppers on top.
- Squirt mayonnaise to your liking.
- Scatter more easy melting cheese and seal the foil tight.
- Cook in a toaster oven for 15 to 20 minutes.
- It is nice to serve with ponzu sauce.
