Zucchini Bread
- 3 c. all-purpose flour
- 3/4 c. sugar
- 1 c. coarsely chopped walnuts
- 4 1/2 tsp. double-acting baking powder
- 1/2 tsp. baking soda
- 1 1/2 tsp. apple pie spice
- 1 tsp. salt
- 4 eggs
- 1 tsp. vanilla
- 3/4 c. honey
- 2/3 c. salad oil
- 2 c. grated zucchini
- Preheat oven to 325u0b0.
- Grease two 8 1/2 x 4 1/2-inch loaf pans.
- In a large bowl, mix flour, sugar, walnuts, baking powder, baking soda, apple pie spice and salt.
- In a medium bowl, beat eggs slightly. Stir in honey, salad oil, zucchini and vanilla. Stir liquid mixture into flour mixture just until flour is moistened. Spread equally into loaf pans.
- Bake 1 hour or until toothpick comes out clean.
- Cool 10 minutes. Remove from pans. Makes 2 loaves.
