Healthy Yellow Squash Recipe
- 2 tablespoons olive oil
- 1 medium yellow onion, thinly sliced
- 4 yellow (summer) squashes (about 2 pounds), sliced thin
- 2 tablespoons water
- Kosher salt
- Freshly ground black pepper
- Heat the olive oil in a medium saucepan over medium-low heat.
- Add the onion, yellow squash, and water.
- Season with salt and black pepper and stir to combine.
- Cover the pan and cook until soft, about 30 minutes, stirring occasionally.
- Serve immediately.
