Easy Crispy and Chewy Potato Starch Donuts

  1. Put a mixing bowl on a kitchen scale and weigh the dry ingredients as you add them (add an ingredient, reset the scale, repeat) one at a time.
  2. Mix together with a rubber spatula.
  3. Add the water and mix together, scraping the bottom of the bowl until you get an even consistency.
  4. Put about 4 cm of oil in a frying pan or small pot and heat on medium heat.
  5. Drop a pinch of the dough into the oil.
  6. If it floats to the surface, then it's hot enough.
  7. Drop the dough in rounded tablespoons one at a time into the oil to fry.
  8. Use cooking chopsticks to push the donuts into the oil in order to fry all sides until golden brown (over medium-low to medium heat).
  9. They're easy to cook through, so they will quickly finish frying.
  10. Be careful not to over-fry!
  11. Drain and enjoy!
  12. They're delicious plain, but if you like, coat with granulated sugar, powdered sugar, cinnamon, kinako, etc for a fashionable treat!
