Easy Crispy and Chewy Potato Starch Donuts
- 70 grams Cake flour
- 30 grams Katakuriko (potato starch flour)
- 30 grams Sugar
- 1 1/2 tsp Baking powder
- 90 ml Water (or milk)
- 1 Frying oil
- Put a mixing bowl on a kitchen scale and weigh the dry ingredients as you add them (add an ingredient, reset the scale, repeat) one at a time.
- Mix together with a rubber spatula.
- Add the water and mix together, scraping the bottom of the bowl until you get an even consistency.
- Put about 4 cm of oil in a frying pan or small pot and heat on medium heat.
- Drop a pinch of the dough into the oil.
- If it floats to the surface, then it's hot enough.
- Drop the dough in rounded tablespoons one at a time into the oil to fry.
- Use cooking chopsticks to push the donuts into the oil in order to fry all sides until golden brown (over medium-low to medium heat).
- They're easy to cook through, so they will quickly finish frying.
- Be careful not to over-fry!
- Drain and enjoy!
- They're delicious plain, but if you like, coat with granulated sugar, powdered sugar, cinnamon, kinako, etc for a fashionable treat!
