Guacamole and BLT Dip
- 1 pkg. (8 oz.) OSCAR MAYER Bacon
- 3 fully ripe avocados Safeway 10 ct For $10.00 thru 02/09
- 1/2 cup finely chopped red onions
- 1/2 cup lemon juice, divided Safeway 4 ct For $5.00 thru 02/09
- 1 large jalapeno peppers, seeded, finely chopped
- 2 cloves garlic, minced
- 1 Tbsp. olive oil
- 1/8 tsp. ground black pepper
- 2 cups tightly packed arugula, chopped
- 4 plum tomatoes, seeded, chopped Safeway 1 lb For $1.29 thru 02/09
- Heat oven to 350F.
- Bake bacon on rimmed baking sheet 20 to 25 min.
- or until crisp.
- Meanwhile, mash avocados and garlic in medium bowl until smooth.
- Stir in onions, 1/3 cup lemon juice, jalapeno peppers and garlic.
- Spoon into large serving bowl.
- Whisk remaining lemon juice, olive oil and black pepper in large bowl until blended.
- Add arugula and tomatoes; toss to coat.
- Spoon over guacamole.
- Drain and crumble bacon; sprinkle over dip.
