Crispy Romaine Salad
- 1 Kirby (pickling) cucumber
- 1 large head romaine lettuce
- 2 medium carrots
- 13 c. light mayonnaise
- 2 tbsp. red wine vinegar
- 1 small clove garlic
- 1/4 tsp. dried tarragon
- salt and pepper
- Cut unpeeled cucumber lengthwise in half, then crosswise into paper-thin half-moons.
- Coarsely slice lettuce.
- In large serving bowl, place cucumber and lettuce.
- With vegetable peeler, shave carrots directly into bowl with lettuce.
- In small bowl, whisk together mayonnaise, vinegar, garlic, tarragon, 1/4 teaspoon salt, and 1/4 teaspoon coarsely ground black pepper.
- Add to bowl with lettuce and vegetables; toss to coat.
