Crispy Romaine Salad

  1. Cut unpeeled cucumber lengthwise in half, then crosswise into paper-thin half-moons.
  2. Coarsely slice lettuce.
  3. In large serving bowl, place cucumber and lettuce.
  4. With vegetable peeler, shave carrots directly into bowl with lettuce.
  5. In small bowl, whisk together mayonnaise, vinegar, garlic, tarragon, 1/4 teaspoon salt, and 1/4 teaspoon coarsely ground black pepper.
  6. Add to bowl with lettuce and vegetables; toss to coat.
