Stir-Fried Shrimp with Lemon Grass
- 1 tablespoon lemongrass chopped fine
- 1 tablespoon garlic chopped
- 1 x black pepper fresh ground
- 1/2 teaspoon salt
- 4 each red chili peppers dried, soaked and chopped
- 3 tablespoons fish soy
- 1 tablespoon sugar
- 1 tablespoon cornstarch dissolved in, 2 tb water
- 4 tablespoons vegetable oil
- 2 pounds shrimp shelled
- 1/4 pound mushrooms cut up
- 1/4 pound snow pea pods stringed
- 1/4 cup peanuts chopped
- 2 tablespoons scallions, spring or green onions slivered
- Pound A Mixture ingredients to a paste in a mortar or in a food processor.
- Mix the B Mixture and set aside.
- Heat the oil in a wok and add the a mixture and stir-fry until the aroma is released (a few seconds).
- Increase heat and add shrimp, mushrooms and snow peas for 3 minutes.
- Add the B Mixture and blend well.
- Garnish and serve with rice or fried fine noodles.
