Ribeyes with Grilled Pineapple and Cottage Cheese

  2. Slather 1 tablespoon butter onto each side of the steaks.
  3. Season liberally with pepper and just a bit of salt.

  5. Set a grill pan over medium-high heat and pour in the olive oil.
  6. Grill the steaks for about 4 minutes on each side, or until they form a beautiful crust.
  7. Set aside on a cutting board or plate and cover with tin foil.

  9. Lay the pineapple in a single layer in the same pan used to grill the steaks.
  10. Grill for a few minutes on each side.

  12. To plate up, top each steak with a slice or two of pineapple and 1/4 cup of cottage cheese.
