Tuna With Two Sesames
- 4 each tuna fish fillets, yellowfin
- 1/4 cup sesame seeds black
- 1/4 cup sesame seeds white
- 1/4 cup vegetable oil divided
- 2 teaspoons sesame oil
- 2 tablespoons wasabi powder
- 2 tablespoons heavy whipping cream
- 1 cup beurre blanc
- 18 pound butter unsalted
- 4 ounces mushrooms shiitake
- Mix sesame seeds and dredge tuna steaks until heavily crusted.
- Shake excess.
- Saute mushrooms in 2 tablespoons vegetable oil with some salt and pepper.
- In another hot skillet add 2 tablespoons vegetable and sesame oil, sear fish on both sides until medium rare to rare.
- Mix cream and wasabi; whisk in beurre blanc.
- Serve tuna with mushrooms and sauce.
