Granola Carrot Cake
- 1/2 c. butter or margarine
- 3/4 c. firmly packed brown sugar
- 2 eggs
- 2 c. grated carrots
- 3/4 c. all-purpose flour
- 1/2 tsp. soda
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. ground cinnamon
- 1/2 tsp. ground nutmeg
- 1 c. granola cereal
- Microwave butter in a 2 1/2-quart glass mixing bowl at High 30 seconds.
- Blend in brown sugar.
- Beat in eggs.
- Stir in carrots, flour, soda, baking powder, salt, cinnamon, nutmeg and granola cereal.
- Grease the bottom only of an 8-inch round baking dish.
- Pour batter into dish; microwave at High 7 to 8 minutes. Rotate dish at 3 minute intervals.
- Cool thoroughly before frosting with Cream Cheese Frosting.
- Serves 6 to 8.
