Pureed Yams with Ginger, Star Anise, and Cinnamon

  1. In a medium pot, add yams, star anise, cinnamon stick, and enough stock to cover, about 4 cups.
  2. Bring to a boil over medium-high heat and cook yams until soft, about 10 minutes.
  3. Drain, reserving liquid and discarding spices.
  4. Transfer yams to a food processor.
  5. Add butter, brown sugar, soy sauce, and ginger, and blend.
  6. Add reserved liquid to achieve a smooth consistency.
  7. Season with salt and pepper, and serve hot.
