Honey Chicken Skewers
- 500g skinless chicken thigh fillets, cut into long strips Whole Foods 1 lb For $3.99 thru 02/09
- Marinade
- 1 tablespoon VEGEMITE
- 1 tablespoon oil
- 1 teaspoon grated fresh ginger
- 1 tablespoon honey combined with
- 2 tablespoons desiccated coconut
- Thread strips of chicken onto wooden skewers.
- Place in a single layer in a shallow dish.
- Combine the VEGEMITE, oil, ginger, honey and coconut to form a marinade and spread over the skewers.
- Cover and refigerate for 30 minutes or overnight.
- Preheat BBQ or grill and cook chicken skewers for 3 - 5 minutes each side over a medium heat until cooked through, basting occasionally with remaining marinade.
