Mom's Pickled Red And Green Peppers Recipe

  1. Wash peppers, remove stems and seeds.
  2. Cut in 3/4" strips.
  3. Place pepper strips in a bowl.
  4. Cover with boiling water.
  5. Let stand 5 min; drain.
  6. Combine vinegar, water and sugar in a saucepan and simmer 15 min.
  7. Meanwhile, pack peppers into clean, warm jars.
  8. To each jar, add in 2 cloves garlic, 1 tsp.
  9. salad oil and 1/2 tsp.
  10. salt.
  11. Pour warm liquid over peppers to 1/2" from top (be sure peppers are covered).
  12. Cap each jar at once with warm caps.
  13. Makes 4 pints.
  14. When ready to serve, chill 12 hrs prior to ensure crispness.
