Pico de Gallo Cheese Crisps
- 4 Small Flour Tortillas
- 4 teaspoons Butter
- 2 cups (or As Needed) Shredded Cheese, Such As Colby Jack, Cheddar, Queso Quesadilla, Or Oaxaca
- Pico De Gallo - For Topping
- 1 To 2 Ripe Avocados
- Fresh Cilantro For Garnish
- Salt And Red Pepper Flakes, For Garnish
- Preheat oven to 350 degrees F.
- Place each of the small tortillas on a baking sheet.
- Spread 1 teaspoon butter on each tortilla.
- Place the baking sheet into the oven and let the tortillas toast for 57 minutes.
- Once the edges start to turn golden brown, remove from the oven.
- Place 1/4 to 1/2 cup of cheese on each of the tortillas and place back into the oven for about 3 minutes until the cheese has completely melted.
- Remove from oven.
- Top with pico de gallo, avocado and cilantro (or any other toppings that you prefer).
- Sprinkle with salt and red pepper flakes.
- Serve immediately.
