Pico de Gallo Cheese Crisps

  1. Preheat oven to 350 degrees F.
  2. Place each of the small tortillas on a baking sheet.
  3. Spread 1 teaspoon butter on each tortilla.
  4. Place the baking sheet into the oven and let the tortillas toast for 57 minutes.
  5. Once the edges start to turn golden brown, remove from the oven.
  6. Place 1/4 to 1/2 cup of cheese on each of the tortillas and place back into the oven for about 3 minutes until the cheese has completely melted.
  7. Remove from oven.
  8. Top with pico de gallo, avocado and cilantro (or any other toppings that you prefer).
  9. Sprinkle with salt and red pepper flakes.
  10. Serve immediately.
