Black Hills Burgers
- 2 lbs ground buffalo meat
- 1 (4 ounce) candiced green chili peppers, drained
- 1 lb bacon, cooked (I used Oscar Meyer Maple bacon, but whatever you like works)
- salt (to taste)
- pepper (to taste)
- cook bacon to your preferred "doneness", drain on paper towels and let cool, then chop up into little pieces.
- drain chiles.
- put ground buffalo, chiles, and bacon in a bowl, add salt and pepper to taste, and mix together.
- form meat mixture into patties.
- cook burgers using whatever burger-cooking method you like, but remember that buffalo meat cooks up faster than beef.
- top with your favorite burger toppings and serve!
