Siamese Seviche - Ceviche for Pussy Cats
- 23 cup lime juice
- 12 teaspoon sea salt
- 1 lb sole (or other white fish) or 1 lb flounder (or other white fish)
- 1 pinch pepper
- Mix all the ingredients except fish.
- Cut fish into 2" strips by 1/4" wide.
- Cover fish strips with the juice mixture.
- refrigerate for at least 3 hours and as much as 24 hours.
- The lime juice cooks the fish and it is safe to eat.
- Keeps for several days in the fridge.
