Refreshing Ramps and Natto Shira-ae
- 3 bunches Ramps (or alpine leek)
- 1 block Tofu (I use silken)
- 1 pack Natto (I use crushed natto)
- 1 Ponzu
- 1 Bonito flakes / white sesame seeds
- Prepare the ramps.
- For details, see.
- Boil the prepared ramps in salt water for 1-2 minutes.
- Drain them in a sieve, and quickly rinse them under running water.
- (Don't soak them, just rinse.)
- Squeeze out the water, and roughly cut into 2 cm pieces.
- Put the drained tofu, natto, ramps, bonito flakes, sesame seeds and ponzu in a bowl, and mix roughly with a spoon to finish.
