Refreshing Ramps and Natto Shira-ae

  1. Prepare the ramps.
  2. For details, see.
  3. Boil the prepared ramps in salt water for 1-2 minutes.
  4. Drain them in a sieve, and quickly rinse them under running water.
  5. (Don't soak them, just rinse.)
  6. Squeeze out the water, and roughly cut into 2 cm pieces.
  7. Put the drained tofu, natto, ramps, bonito flakes, sesame seeds and ponzu in a bowl, and mix roughly with a spoon to finish.
