Cara's Gluten free Baked Penne
- 12 oz Gluten free Penne
- 1 lb ground hot Italian sausage
- 1 Onion, diced
- 4 clove Garlic, minced
- 8 oz Button Mushrooms, sliced
- 1/2 tsp ground black pepper
- 3 tsp Italian Seasoning
- 14 oz 2 cans of Italian seasoned Crushed Tomators
- 3 cup Fresh Spinach
- 8 oz Mozzarella cheese, cubed
- 2 cup Fresh grated Parm/Romano blend
- Preheat oven to 425
- Cook Penne according to package directions
- Brown sausage, onion and garlic
- Add mushrooms, saute 3 minutes
- Add pepper, Italian seasoning and tomatoes
- Simmer 8 minutes stirring occasionally
- Combine sausage, pasta, spinach, mozzarella and 1/2 of parm/romano
- Pour into 9 x 13 baking dish
- Sprinkle remaining parm/romano on top
- Bake 15 minutes
