Cheddar Shortbread

  1. Lightly butter two baking sheets.
  2. Preheat oven to 350 degrees .
  3. Beat butter with the cheese until smooth.
  4. Beat in seasonings, then flour.
  5. Turn dough out on a lightly floured board and knead for a minute or two until blended.
  6. Roll out dough to 1/2" thick, cut with cookie cutter.
  7. Sprinkle poppy or sesame seeds if desired.
  8. Bake until edges are light brown, about 7 minutes.
  9. Makes 3 dozen.
