Spicy Clams

  1. With a stiff brush, scrub the clams under cold running water.
  2. Drain in a colander.
  3. Rinse black beans to remove excess salt.
  4. In a small bowl, mash beans with garlic and 1 Tblsp.
  5. of oil.
  6. In a wok, heat remaining 2 Tblsp.
  7. oil over medium heat.
  8. Add black bean mix, scallions, and chile paste and stir fry until aromatic, about 30 seconds.
  9. Add white wine and 1/4 cup water.
  10. Cook 1 minute.
  11. Add clams, bring to a boil, and cover.
  12. Cook until clams open, 5 to 10 minutes.
  13. Discard any clams that do not open.
  14. Uncover and toss to coat well with sauce.
  15. Remove to serving bowl.
