Everyone's Favorite Applesauce
- 8 medium Organic Apples (I like Fuji, Honeycrisp and Gala)
- 1/2 cup Water
- 1 Vanilla bean
- 2 tbsp Brown sugar
- 1 pinch Salt
- Wash the apples.
- Peel all the apples.
- (I like to peel mine in a spiral to eliminate waste in a timely manner).
- Once all the apples are pealed, begin cutting them into wedges.
- Cut out the harder inner part of the core off each wedge.
- Place all the wedges in a pot.
- Add the water.
- Drop in the vanilla bean.
- (I reserve one special bean just for my applesauce.)
- Cover, turn the burner to medium heat and simmer for 25 minutes.
- Mash the semi-tender wedges with a masher or fork and continue to simmer for another 20 minutes, covered.
- Then mash apples for the final time.
- Add the sugar and salt before removing the vanilla bean.
- Allow to cool 15 minutes before serving.
- Try as is or as a topping for ice cream.
- Also great with savory pork roasts.
