Our Family Recipe For Sweet Vinegar Sauce
- 300 ml Aged rice vinegar (high quality is best)
- 8 tbsp Sugar (sugar cane crystals are best)
- 2 tbsp Mirin
- 1 tbsp Sake
- 5 cm square Kombu for dashi stock
- 1 tsp Shiro-dashi
- Wipe the kombu with a dry towel or paper towel.
- Put all the ingredients in a pan and bring to a boil over high heat.
- Turn down the heat to low and simmer for 2 minutes to take the edge off the vinegar.
- Cool, transfer to a container and keep in the refrigerator.
- You can use this sauce in.
- Or in
rice vinegar, sugar, mirin, sake, stock
