Beef & Chutney Rice Wraps
- 1 (8.8-ounce) package ready-to-heat whole grain brown rice
- 3/4 cup shredded carrots
- 1/2 cup purchased mango chutney
- 1 teaspoon curry powder
- 1/2 pound thinly sliced deli roast beef
- 8 (3/4-ounce) slices Land O Lakes Deli American
- 4 (9x7-inch) whole wheat sandwich wraps*
- 3/4 cup chopped fresh cilantro
- Heat rice in microwave as directed on package; spoon into bowl.
- Stir in carrots, chutney and curry powder; set aside.
- Place 1/4 beef and 2 slices cheese onto each sandwich wrap, to within 1 inch from top and sides.
- Spoon 1/2 cup rice mixture over cheese.
- Sprinkle cilantro over rice.
- Fold 2 opposite sides of wrap over filling.
- Starting at 1 open end, roll up to enclose filling.
- Wrap securely in waxed paper.
- Refrigerate 1-2 hours or overnight to mellow flavors.
- Serve hot or cold.
- Microwave individually wrapped sandwiches 30-45 seconds or until warm.
- *Substitute 4 (8-inch) flour tortillas.
