Ham Roll Ups Mandarin Recipe
- 1 can mandarin oranges
- 1 1/2 c. cooked rice
- 1/3 c. mayonnaise
- 2 tbsp. minced pecans
- 2 tbsp. snipped parsley
- 1 tbsp. sliced green onion
- 8 lg. thin slices boiled ham
- 1/4 c. orange marmalade
- 1 tbsp. lemon juice
- 1/4 teaspoon grnd ginger
- Parsley sprigs
- Reserve 8 orange sections.
- Drain the remainder and chop.
- Then combine with the cooked rice, mayonnaise, pecans, parsley, and onion.
- Divide mix among ham slices.
- Roll ham around filling and place seam side down in 10 x 6 x 2 inch baking dish.
- Combine marmalade, lemon juice and ginger; brush over roll-ups.
- Bake uncovered at 350 degrees for 25-30 min.
- Garnish with reserved oranges.
