Dublin Coddle
- 1 lb pork sausage
- 8 oz bacon rashers
- 4 large carrots
- 2 large onions
- 6 medium peeled potatoes
- 1 bunch fresh parsley and thyme
- 1 salt and pepper to taste
- 1 cold water or clear stock to cover
- place sausages,bacon ,roughly sliced carrot, quartered onions , parsley & thyme in a large pot or skillet
- cover with cold water or stock
- bring to boil and simmer for at least an hour
- potatoes can be added at the beginning of cooking or anytime when simmering.
- If added at the start they will act as a thickner for the coddle.
- Adding later and cook for the last 20 mins or until done.
- Add seasoning to taste
- serve with fresh irish brown soda bread
