Dublin Coddle

  1. place sausages,bacon ,roughly sliced carrot, quartered onions , parsley & thyme in a large pot or skillet
  2. cover with cold water or stock
  3. bring to boil and simmer for at least an hour
  4. potatoes can be added at the beginning of cooking or anytime when simmering.
  5. If added at the start they will act as a thickner for the coddle.
  6. Adding later and cook for the last 20 mins or until done.
  7. Add seasoning to taste
  8. serve with fresh irish brown soda bread
