Curried Beef Stir-Fry

  1. In a bowl, combine soy sauce, garlic, ginger and 2 tablespoon oil.
  2. Add beef; toss to coat.
  3. Cover and refrigerate for 15 to 20 minutes.
  4. In a large skillet or wok, heat remaining oil.
  5. Stir-fry beef over medium-high heat for 2 to 3 minutes.
  6. Remove beef and set aside.
  7. In the same skillet, stir-fry the onion for 1 minute; add peppers and celery.
  8. Stir-fry for 2 minutes; return beef to the skillet.
  9. Combine water, cornstarch and curry powder until smooth; add to skillet.
  10. Bring to a boil and boil for 1 minute, stirring constantly.
  11. Serve over rice or noodles.
