Holiday Beef Tenderloin

  1. Trim beef tenderloin.
  2. Combine dry ingredients.
  3. Rub tenderloin with oil, then coat with spice mixture.
  4. Place in roasting pan and chill for 8 hours, covered.
  5. Bake at 500 for 15 minutes, until browned.
  6. Lower temperature to 375, and bake for 20 minutes more (until it is done to your liking).
  7. Let it stand for 10 minutes.
  8. Slice, and serve with horseradish mayo.
