Holiday Beef Tenderloin
- 5 pounds Beef Tenderloin- Or Whatever Size You Prefer
- 1 Tablespoon Salt
- 1- 1/2 teaspoon Onion Powder
- 1- 1/2 teaspoon Garlic Powder
- 1- 1/2 teaspoon Pepper
- 3/4 teaspoons Ground Red Pepper
- 1/2 teaspoons Cumin
- 1/2 teaspoons Ground Nutmeg
- 1/4 cups Olive Oil
- Trim beef tenderloin.
- Combine dry ingredients.
- Rub tenderloin with oil, then coat with spice mixture.
- Place in roasting pan and chill for 8 hours, covered.
- Bake at 500 for 15 minutes, until browned.
- Lower temperature to 375, and bake for 20 minutes more (until it is done to your liking).
- Let it stand for 10 minutes.
- Slice, and serve with horseradish mayo.
