Acorn Carrot Cake
- 23 cup flour
- 23 cup sugar
- 1 12 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 12 teaspoon nutmeg
- 12 teaspoon salt
- 12 cup low-fat yogurt
- 14 cup vegetable oil
- 3 large eggs
- 2 cups carrots, grated
- 23 cup acorn, ground
- 12 cup pecans, ground
- Preheat oven to 350F.
- Grease and flour a 13x9 inch pan.
- Mix dry ingredients.
- Stir in yogurt, oil, and eggs.
- Stir in carrots and nuts.
- Spread evenly in pan.
- Bake until a knife inserted in the center comes out clean, about 30 minutes.
- Cool slightly on a rack, then remove from pan to finish cooling.
