Honey Lime Braised Pork

  1. Preheat oven to 160C/140C fan-forced.
  2. Heat oil in a flameproof baking dish over medium-high heat.
  3. Add pork.
  4. Cook, turning occasionally, for 5 minutes or until browned.
  5. Add ginger, garlic, star anise, soy sauce, kecap manis, honey, lime juice and 3/4 cup cold water.
  6. Turn pork to coat.
  7. Transfer to oven.
  8. Bake, turning every 30 minutes, for 2 hours or until cooked to your liking.
  9. Remove from oven.
  10. Transfer pork to a plate.
  11. Cover to keep warm.
  12. Strain cooking liquid into a saucepan.
  13. Bring to the boil over medium-high heat.
  14. Reduce heat to medium.
  15. Simmer for 5 to 7 minutes or until thickened.
  16. Slice pork.
  17. Divide between plates.
  18. Top with sauce.
  19. Serve with rice and choy sum.
