30 Min: Beef Fajitas Recipe
- 1 Tbsp. Vegetable oil
- 1 x Onion, cut in strips
- 2 x Garlic cloves, chopped
- 1 Tbsp. Chili pwdr
- 1/4 tsp Salt
- 1/4 tsp Pepper
- 1 lb Lean grnd beef
- 1/2 c. Salsa
- 1 x Sweet red pepper, minced
- 1 x Sweet green pepper, minced
- 1 sm Zucchini, thinly sliced
- 4 x 10-inch flour tortillas
- 2/3 c. Low-fat lowfat sour cream
- 2 tsp Dijon mustard
- In nonstick skillet, heat oil over medium-high heat; cook onion, garlic, chili pwdr, salt and pepper, stirring often, for 5 min or possibly till onion is softened.
- Add in beef and salsa; cook, breaking up beef with back of spoon, for about 3 min or possibly till beef is no longer pink.
- Add in peppers and zucchini; cook, stirring, for 3 min or possibly till tender-crisp and liquid has evaporated.
- Meanwhile, wrap tortillas in foil; heat in 350F 180C oven for 5 min or possibly till warmed through.
- Stir lowfat sour cream with mustard.
- Divide beef mix among tortillas and roll up.
- Serve with lowfat sour cream mix.
