30 Min: Beef Fajitas Recipe

  1. In nonstick skillet, heat oil over medium-high heat; cook onion, garlic, chili pwdr, salt and pepper, stirring often, for 5 min or possibly till onion is softened.
  2. Add in beef and salsa; cook, breaking up beef with back of spoon, for about 3 min or possibly till beef is no longer pink.
  3. Add in peppers and zucchini; cook, stirring, for 3 min or possibly till tender-crisp and liquid has evaporated.
  4. Meanwhile, wrap tortillas in foil; heat in 350F 180C oven for 5 min or possibly till warmed through.
  5. Stir lowfat sour cream with mustard.
  6. Divide beef mix among tortillas and roll up.
  7. Serve with lowfat sour cream mix.
