Lemonade Wafers

  1. Preheat oven to 350F (180C).
  2. Combine shortening and sugar in medium bowl.
  3. Beat at medium speed of electric mixer until light and fluffy.
  4. Add lemon peel andamp; juice.
  5. Blend well.
  6. Combine flour, salt and baking powder.
  7. Add to lemon mixture at low speed until just blended.
  8. Drop dough by level measuring tablespoonfuls 2 inches apart onto ungreased baking sheet.
  9. Sprinkle top with coconut, if desired.
  10. Bake for 8 to 10 minutes or until cookies are set and edges are golden brown.
  11. Watch closely so that coconut does not burn.
  12. Cool 2 minutes on baking sheet before removing to cooling rack.
  13. Cool completely.
