Kelly's Moist Cornbread
- 1 cup all-purpose flour
- 1 cup yellow cornmeal
- 2/3 cup white sugar
- 1 tsp salt
- 3 1/2 tsp baking powder
- 2 eggs
- 1/2 cup sour cream
- 1/2 cup half and half (light cream)
- 1/3 cup vegetable oil
- 1 can cream of corn (14.75 oz can)
- Preheat oven to 375AF
- Spray an 8x11" pan with cooking spray.
- In a large bowl combine flour, cornmeal, sugar, salt and baking powder.
- With a wooden spoon stir in eggs, half and half, sour cream,vegetable oil and creamed corn.
- Bake 30-35 min or until toothpick inserted in center of loaf comes out clean.
- Do not overcook.
