Summer Squash Cheese Casserole
- 3 cups summer squash, chopped (zucchini, yellow or chayote)
- 1 cup cracker crumb
- 1 cup low-fat cheese, shredded
- 2 tablespoons margarine, melted
- 2 tablespoons onions, chopped
- 2 eggs, beaten
- Combine all ingredients in large bowl.
- Mix well.
- Pour into greased baking dish.
- Cover.
- Bake 1 hour at 350.
