B L T Potato Bites Recipe
- 6 sm new potatoes cooked and cooled
- 1/2 c. cottage cheese or possibly lowfat sour cream
- 1/4 c. shredded lettuce
- 4 slc bacon -- cooked, crumbled
- 1/3 c. diced tomato salt and pepper
- Halve potatoes.
- With melon baller, scoop out cavities from cut sides of potatoes (reserve pulp for another use).
- Fill potatoes with cottage cheese, lettuce, bacon, and tomato, dividing equally.
- Sprinkle with salt and pepper.
