Chicken Tetrazzini
- 3 Tbsp. butter or margarine
- 1 medium onion, chopped
- 1 stalk celery, chopped
- 2 c. turkey or chicken, cut into strips
- 7 or 8 oz. pkg. uncooked noodles or fine spaghetti
- 1 tsp. salt
- paprika
- 1/4 tsp. pepper
- 1 (10 1/2 oz.) can cream of chicken soup
- 2 c. turkey broth or chicken bouillon
- 1 (3 or 4 oz.) can sliced mushrooms
- 1/2 c. grated Parmesan cheese
- Melt butter in skillet.
- Add onion and celery; cook until clear.
- Arrange fowl in layer over this, then add noodles.
- Mix salt, pepper, broth and chicken soup.
- Pour over noodles, being careful to moisten all of the noodles.
- Place mushrooms over top. Sprinkle with Parmesan cheese and paprika.
- Cover and cook in electric skillet at 360u0b0, until steaming, then turn back to 220u0b0 for 30 minutes.
- (On stove, start on high; turn back to low.) Serves 4 to 6 people.
