Sweet-n-Spicy Mediterranean Shrimp
- 3 Tablespoons Olive Oil
- 1/2 whole Vidalia Onion, Diced
- 3 cups Fresh Tomatoes, Diced (or Two 15 Ounce Cans Diced Tomatoes)
- Kosher Salt And Black Pepper
- 1/4 cups Peppadew Peppers, Chopped
- 1 clove Garlic, Chopped
- 1/4 cups White Wine
- 1/4 cups Flat-leaf Parsley, Chopped
- 18 cups Fresh Basil Leaves, Chopped
- 1 pound Medium Sized Shrimp, Peeled And Deveined
- 1 cup Feta Cheese, Crumbled
- In a large saute pan, heat olive oil over medium heat.
- Add onions and cook for 7 8 minutes, or until soft and cooked through.
- Add the tomatoes, season with salt and pepper, and cook 3 4 more minutes.
- Add in the peppadews, garlic and white wine.
- Stir well and bring to a bubble.
- Once the wine is simmering, lower heat to medium low and simmer for two more minutes.
- Stir in parsley and basil.
- Taste the sauce, and add salt and pepper if needed.
- Add the shrimp to the pan and stir them in.
- Cook on medium low until shrimp is cooked through (cooking time depends on size of shrimp medium size shrimp need about 3 5 minutes).
- Do not overcook the shrimp.
- When shrimp is cooked through, turn off heat.
- Stir in feta and allow it to melt from the heat of the pan.
- Serve over a bed of couscous or rice.
- NOTE: Peppadews (aka sweet piquant peppers) are available in most well stocked grocery stores.
- If your store has an olive bar, they are often located there.
- If you cannot find peppadews, feel free to substitute pickled cherry peppers or pimentos.
