Smoked Ham and Grilled Cheese

  1. Heat oven to 350 degrees F.
  2. In a medium bowl, toss first three cheeses with garlic until well combined.
  3. Divide evenly into 4 portions; press each into a disk-like patty to fit bread slices.
  4. Place each flattened cheese patty with 2 ounces ham between 2 slices of bread.
  5. Spread 1 1/2 teaspoon of the butter on 1 side of each sandwich.
  6. Sprinkle 1 teaspoon of the Parmesan over butter and press into bread with a spatula.
  7. Heat a large nonstick, ovenproof skillet over medium heat.
  8. Place 2 sandwiches, butter side down, in skillet.
  9. Cook about 2 minutes, until golden brown.
  10. While first side is cooking, spread 1 1/2 teaspoon of the butter on other side of each sandwich, sprinkle each with 1 teaspoon of the Parmesan, and press into bread.
  11. Turn sandwiches and cook about 2 minutes, until second side is golden brown.
  12. Place skillet in oven and bake until cheese has melted and sandwich is crispy, 3 to 4 minutes.
  13. Repeat with remaining 2 sandwiches.
  14. Serve with cornichons and Dijon mustard for dipping.
