Smoked Ham and Grilled Cheese
- 5 oz. smoked Gouda cheese
- 5 oz. Jarlsberg cheese
- 2 oz. goat cheese
- 1/4 clove garlic
- 8 oz. sliced smoked ham
- 8 slice Crusty bread
- 4 tbsp. unsalted butter
- 1/4 c. Parmesan cheese
- Heat oven to 350 degrees F.
- In a medium bowl, toss first three cheeses with garlic until well combined.
- Divide evenly into 4 portions; press each into a disk-like patty to fit bread slices.
- Place each flattened cheese patty with 2 ounces ham between 2 slices of bread.
- Spread 1 1/2 teaspoon of the butter on 1 side of each sandwich.
- Sprinkle 1 teaspoon of the Parmesan over butter and press into bread with a spatula.
- Heat a large nonstick, ovenproof skillet over medium heat.
- Place 2 sandwiches, butter side down, in skillet.
- Cook about 2 minutes, until golden brown.
- While first side is cooking, spread 1 1/2 teaspoon of the butter on other side of each sandwich, sprinkle each with 1 teaspoon of the Parmesan, and press into bread.
- Turn sandwiches and cook about 2 minutes, until second side is golden brown.
- Place skillet in oven and bake until cheese has melted and sandwich is crispy, 3 to 4 minutes.
- Repeat with remaining 2 sandwiches.
- Serve with cornichons and Dijon mustard for dipping.
