Penne Primavera With Smoked Mozzarella
- 3 Tbsp. olive oil
- 1 large shallot, chopped
- 6 cloves garlic, sliced thin
- 2 cans whole tomatoes
- 1/2 c. fresh basil leaf, sliced
- 2 tsp. oregano
- 1/4 tsp. salt
- 1 bunch broccoli, cleaned and cut bite-size
- 1 c. chicken broth
- 1 large red sweet pepper, sliced
- 1 large yellow sweet pepper, sliced
- 1 c. Mozzarella, plain or smoked, cubed and keep chilled
- 1 lb. pasta (penne or ziti), cooked
- grated Locatelli cheese
- In large saucepan add 2 tablespoons oil and cook shallot and 1/2 garlic one minute.
- Stir in tomatoes, basil, oregano and salt. Break up tomatoes with fork.
- Simmer and cook partially covered 25 minutes.
- Stir occasionally.
