Penne Primavera With Smoked Mozzarella

  1. In large saucepan add 2 tablespoons oil and cook shallot and 1/2 garlic one minute.
  2. Stir in tomatoes, basil, oregano and salt. Break up tomatoes with fork.
  3. Simmer and cook partially covered 25 minutes.
  4. Stir occasionally.
