Chicken Croquettes

  1. Heat dressing in large saucepan on medium-high heat.
  2. Add flour; cook and stir 1 min.
  3. Gradually stir in broth; cook 2 min.
  4. or until thickened, stirring constantly.
  5. Remove from heat.
  6. Cool slightly.
  7. Add chicken, onions and crushed pepper; mix well.
  8. Shape into 10 (3-inch) logs; roll, 1 at a time, in cracker crumbs until evenly coated.
  9. Heat oil in large skillet to 375F.
  10. Add logs, in batches; cook 3 min.
  11. or until golden brown.
  12. Drain on paper towels.
