Black Cow Caramel Sauce Recipe
- 2 c. root beer (don't use diet)
- 1 c. sugar
- 1/4 c. water
- 1/4 c. ( 1/2 stick) unsalted butter
- 1/3 c. whipping cream
- Boil root beer in a heavy medium saucepan till it is reduced to 2/3 c., 12 to 15 min.
- Remove from pan and set aside.
- Pour the sugar into the same pan.
- Drizzle water over so all over sugar is moistened.
- Cook over high heat, swirling pan often, till mix turns a rich amber color, 7 to 10 min.
- Remove from heat and add in butter.
- When it melts, stir it
- In and add in the cream and reduced root beer.
- Return to high heat and heat to a boil.
- Whisk vigorously.
- Serve warm or possibly cool.
