Turkey Linguine Primavera
- 1 cup coarsely chopped broccoli
- 1/4 cup sliced onion
- 1/2 tsp. Italian seasoning
- 1 clove garlic, crushed
- 1/8 tsp. ground black pepper
- 1 Tbsp. margarine or butter
- 1/2 lb. cooked turkey breast, cut into strips
- 1/2 cup chopped tomato
- 8 oz. linguine, cooked in unsalted water and drained
- 1/2 cup cholesterol-free egg product
- Cook and stir broccoli, onion, Italian seasoning, garlic and pepper in margarine or butter in skillet over medium heat for 3 minutes.
- Add turkey and tomato; cook for 1 minute more or until vegetables are tender-crisp.
- Toss with hot linguine and egg substitute.
- Serve immediately.
