Cucumber and Mint Salsa

  1. PEEL THE CUCUMBER and cut in half lengthwise.
  2. Scoop out and discard the seeds.
  3. Finely chop the flesh and place in a colander.
  4. Sprinkle with salt and place the colander over a plate to catch the water for 30 minutes.
  5. Rinse the cucumber and squeeze out any excess water.
  6. Place in a mixing bowl and add the oil, lemon juice and mint leaves.
  7. Mix well and pour into a small serving bowl.
