Triple 'Chocolate Therapy' Cookies

  1. Preheat oven to 350F.
  2. Cream together the butter and sugar until fluffy.
  3. Add eggs and beat until even fluffier.
  4. Add vanilla, baking soda and salt.
  5. Beat for 15 seconds.
  6. Stir in, by hand, the cocoa.
  7. Do this gently or you will end up with a cloud of cocoa in your face!
  8. When thoroughly mixed, stir in flour.
  9. Fold in chocolate chips.
  10. Drop by tablespoon full onto ungreased cookie sheet.
  11. Leave at least 2" between cookies.
  12. Place the 1/4 cup sugar on a small plate.
  13. Touch bottom of a glass to unused cookie dough to get it moist (only need to do this once).
  14. Dip bottom of glass in sugar and lightly press down on cookie dough.
  15. Repeat for each cookie on pan.
  16. Bake for 8 minutes.
  17. Remove to wire rack to cool.
  18. Makes 4 - 5 dozen.
