Raspberry-Spinach Salad
- 2 tablespoons raspberry vinegar
- 2 tablespoons seedless raspberry jam
- 13 cup olive oil
- 1 (8 ounce) bag baby spinach leaves, prewashed
- 34 cup macadamia nuts
- 1 cup fresh raspberry, washed
- 3 kiwi fruits, peeled and sliced
- To make the dressing, combine the vinegar and jam until blended, then slowly drizzle in the olive oil until well blended.
- In a bowl toss the spinach, nuts, fruit, and dressing together.
- Serve.
